¼teaspoonsalt
1tablespoonground flaxseedsor chia seeds
3tablespoonswarm water
2teaspoonsvanilla extract

½teaspoonbaking soda
½teaspoonbaking powder
1cupquick-cooking oats
1cuppuffed rice cerealnot rice krispies, see notes
½cupsweetened shredded coconut
Instructions
Preheat the oven to 350°F / 180°C. Add the ground flaxseed and water to a small bowl. Stir to combine and set aside until thickened and cooled for about 10 minutes.
1 tablespoon ground flaxseeds, 3 tablespoons warm water
Cream the vegan butter, sugars and salt in a large bowl. Add the flaxseed mixture and vanilla and mix until smooth.
½ cup vegan butter or margarine, ½ cup granulated cane sugar, ¾ cup light brown sugar, ¼ teaspoon salt, 2 teaspoons vanilla extract
Sift the flour, baking soda and baking powder into a separate bowl. Gradually stir it into the creamed mixture.
1¼ cup unbleached all-purpose flour, ½ teaspoon baking soda, ½ teaspoon baking powder
Add the oatmeal, puffed rice, and shredded coconut and mix until combined. Chill the dough for 1 hour or overnight in the fridge or until firm.
1 cup quick-cooking oats, 1 cup puffed rice cereal, ½ cup sweetened shredded coconut
Make equal portions of cookie dough using a #24 cookie scoop (about 50g or 3 tablespoons of dough). Place them at least 2½ inches apart on a cookie sheet lined with parchment paper. Flatten the dough slightly with your palm or the bottom of a cup.
Bake for 10 to 12 minutes or until lightly browned but slightly soft in the center. Do not overbake for chewier cookies. Cool for 5 mins on the cookie sheet before transferring them to a cooling rack.
Notes
The chilling step is optional but can help reduce the spreading of the cookies—no need to flatten the cookie dough portions before baking.
Rice Krispies are crunchier than puffed rice cereal and can break into crumbs while mixing. Use it only if it’s all you can find, but be very gentle while mixing the dough.
